I have been baking a LOT recently. Ever since I have came home from London for Christmas to visit my family I really have been going wild in the kitchen.. I think it is the combination of space and a cupboard full of (free) ingredients, I can’t help but make the most of it!
I have been making biscuits and lots of these I have decided to give to family and friends as Christmas presents. I have been trying to have a minimalist christmas this year, so this means getting creative with what I give people. It also works out well for me because it is so much cheaper than buying loads of presents and I often find that people appreciate them more because they can see that you have put time and effort into them.
These gingerbread cookies are super super simple and easy. They are quick to make and bake. Perfect for Christmas when you may not have a lot of time. They are also VEGAN so that is an added bonus!
- 160g rice flour
- 250g ground almonds
- 400g dates
- 10 tbsp water
- 2 tsp ground ginger
- Blend all the ingredients in a food processor. You will need to add the water slowly to bring it into a dough consistency.
- Roll out on a floured surface and cut out gingerbread men with a cookie cutter.
- Put on a tray and bake in a preheated oven at 180degrees for 7-10 minutes.
