20-Minute Dinner Recipe

This has been my boyfriend and I’s favourite dinner for a while now. It is so simple to make and pretty quick. You can make it in advance and keep it in the fridge (it tastes amazing as left overs the next day) or you can make it and eat it straight away.

Ingredients: 

Use whatever vegetables you like! Either whatever you have in the fridge or just your favourites. For this dish I used: broccoli, carrots, aubergine, tomatoes. I also love artichoke, courgette or capers in the mix.

You will also need balsamic vinegar and apple cider vinegar and seasoning.

Method: 

Chop the vegetables into chunks and put them into a dish. Cover with a few table spoons of balsamic vinegar, apple cider vinegar and whatever seasoning you like. The amounts you use of everything isn’t extremely important. Use however much veg you want, and then according to your own tastes add the vinegar. I would recommend starting with about 5tbsp balsamic vinegar for a dish of vegetables, and then adding more if you like.

Cook in a preheated oven at 180 degrees for about 20 minutes, or until al your vegetables are cooked.

I served it with roasted potatoes and then lots of tahini afterwards. It also tastes great with rice or pasta!

This is a super healthy dish yet really tasty. I think it just goes to show how tasty vegetables can be, you really don’t have to have anything special in your house.
