BANANA BREAD BITES – RECIPE

These are vegan

sugar free

fat free

delicious

Ingredients: 

  • 2 Bananas
  • 75g Walnuts
  • 7g Bicarbonate of Soda
  • 3 tbsp Milled Flaxseeds
  • 100g Self Raising Flour
  • 1 tsp Cinnamon
  • 100g vegan chocolate (optional)

Method: 

  • Preheat oven to 180 degrees
  • Mash bananas with a fork
  • Chop walnuts into small chunks
  • Add everything to a bowl and mix
  • Shape into ball shapes and place onto a baking tray
  • Bake in oven for 12 minutes
  • Once cooled,
  • Melt the chocolate and coat cookies with chocolate
  • ENJOY!

I totally loved making these (and eating them).. there were created and inspired by a friend of mine who makes the most amazing banana and walnut loaf, so I thought I would try to recreate it but turn them into cookies.. the cookies turned into little ‘balls’ so I named them ‘bites’ (but if you have muffin trays then they would make good muffins!)
